If you are driving down from Paris, you likely won%26#39;t be there quite that early. Also, if you mean could you do all (rather than one or two) of those things on Saturday afternoon, I think not - especially as a canoe ride would mean delays of various sorts while you get it organized, etc. (and you would have the same problem trying to get there, get the canoe, do the ride and get to your next location, if you tried to do it on Sunday in only 90 minutes - best to leave it to Monday, after Font de Gaume).
On that first day I would suggest walking a bit in Sarlat (most likely the market will be over - they tend to end around 12:30 or 1:00, as to the majority of stalls), then going to Beynac (allow at least 90 minutes to go through it, but it%26#39;s at your own pace so not a problem, then back to Domme to walk around the village and have dinner.
Have a great time!

Thank you, have you been to any of the caves I mentioned? I was wondering if I should skip the Cambrelle.

You have way too much stuff packed into not nearly enough time. It is going to be 5-1/2 to 6 hours driving time from Paris, and that%26#39;s if you don%26#39;t mess around very much. (Not a particularly memorable drive, but you still have to stop to take on and leave off fluids)
Yes, the market will be all but gone by 2 pm -- it usually is winding down just as the cafes are starting to get busy for lunch. Sarlat is definitely worth a visit, market or not, and it%26#39;s a great place to poke around and explore.
You then have time for Beynac OR the prehistoric museum or possibly a canoe ride (doubtful) -- but not for more than one. I%26#39;d go to Beynac -- it%26#39;s worth the trip.
You also have transportation times to consider -- and some of your things are not all that close together -- go to www.viamichelin.com and plug in your sites to get a feel for the drive times. The Dordogne is not expressways -- it%26#39;s windy little two-lane roads through the hills, and even if it%26#39;s not very far, it could take you a while.
Remember, too, that most things don%26#39;t open until 9 to 10 am, depending on the place...and Monday, don%26#39;t do ANYTHING in the morning that would jeopardize your appointment at Font de Gaume - it%26#39;s not worth the chance of missing this wonderful place.
Pick the 2 or 3 things that most interest you each day, then hold the rest as a %26quot;if we have time%26quot; -- there%26#39;s way to much to do in teh Dordogne to ever pack into 3 days.
Enjoy your trip, and start planning the things you%26#39;ll do on your next trip.
